My favourite simple sponge. It's a vegan Victoria Sponge with jam in the middle and a whipped coconut yoghurt icing. The recipe is gluten free too and it's amazingly easy to make. You can also use this recipe as a base for so many other cakes too, adapting it to be lemon, chocolate, orange, coffee, carrot etc too.
