Chicken dum biryani / hyderabad style chicken biryani recipe . chicken dum biryani step by step

INGREDIENTS;
WASH AND SOAKED BASMATHI RICE 400 GM
WASHED CHICKEN 500 GM
GINGER GARLIC PASTE 50 GM
CURD 300 GM
BROWN OR FRIED ONIONS 200 GM
(3 large onions thinly chop and deep fry )

whole biryani masala ingredients ;
biryani leaves 4 (2 marination & 2 rice preparation)
cloves 9(5 marination & 4 rice)
cinnamon stick 3 inch ( 2 marination & 1 for rice)
staranise 1 full bud for marination
shahi jeera 1 tsp for marination
nutmeg small piece for marination
black stone flower few for marination
kapok buds 2 for marination
elachi 4 for rice
mace 3 buds ( 2 for marination & 1 for rice)
6 green chilli
coriander leaves 1 cup
mint leaves 1 cup
ghee 2 tbsp
oil 4 tsp ( 2 spoons for marination & 2 spoons for rice)
biryani masala powder 3&1/2 spoon
turmeric pwd 1/2 tsp
salt to taste
red chilli pwd 2 tsp
garam masala pwd 1 tsp
chicken masala pwd 1 tsp
half lemon
water 3 lt for cooking rice

in a biryani pot we need to put the marinated chicken & rice as layers .and then we need to seal it with dough(steam shouldn't come out) as shown in the video.


first cook the biryani on low medium flame for 20 minutes

cook for another 15 minutes on low flame

heat the tawa and place the biryani pot on tawa and cook it for another 15 minutes on low flame

after 15 mins turn off the flame and leave it for 10 minutes

then open carefully and serve
