Mushroom and capsicum pieces marinated with garlic, balsamic vinegar and a few other mild spices, layered in skewers and grilled. A great party starter !
BALSAMIC GARLIC GRILLED MUSHROOM SKEWERS
10-12 button mushrooms
2 tablespoons balsamic vinegar
4 garlic cloves, finely chopped
¼ cup mixed capsicums, cut into cubed
1 teaspoon fresh thyme
1 tablespoon soy sauce
2 tablespoons olive oil
Fresh coriander leaves for garnishing
1. Mix together mixed capsicums, mushrooms, garlic, thyme, vinegar and soy sauce in a bowl. Set aside to marinate for 10-15 minutes.
2. Skewer the mushrooms and mixed capsicums alternatively onto satay sticks.
3. Heat olive oil in a non-stick grill appear.
4. Garnish with coriander leaves and serve immediately with onion rings and lemon slices.
